When I am being normal, I serve it with rice and beans, along with a quick pineapple salsa. It all works so well together. This dish has a Cuban flair: rice, beans, and a mojo sauce are served with tropical fruits and rice. Yum. Yum yum yum.
The Chicken is a great option if you are in a hurry or don’t want to spend the time on the extras.
It’s rare for me to really love a “plain chicken” recipe, but this Chicken is eat-directly-off-the-pan delicious. You can brush the Chicken that has been browned with extra sauce right out of your oven. Then, pass me some skewers, and you are done. All I need is this! It’s just a snack turned into dinner standing over the stove.

Ingredients
Cilantro Orange Sauce:
- 1/4 – 1/2 cilantro Finely chopped
- 2 Cloves You can also find out more about the following: grated
- Juice of the day: 2 Oranges (about 4-5 tablespoons juice) + a little zest
- Three tablespoons Brown sugar
- Three tablespoons of avocado oil
- 2 Tablespoons white vinegar
- 1 1/2 teaspoons Salt
Chicken:
- 1.25 pounds Boneless Skinless Chicken Thighs, cut into bite-sized pieces
- Wood or metal Skewers (optional)
Optional/For Serving:

- 1 – 2 diced pineapple, Mango, and avocado (optional)
Instructions
- Start soaking your wood skewers if you use them!
- Line a baking tray with aluminum foil or parchment paper. Turn on the broiler and place one of the racks at the very top, approximately 6 inches away from the heating element.
- Place the Chicken in a large bowl.
- Mix the sauce ingredients in a small dish.
- Then, pour half the sauce over the coated Chicken. Reserve the remaining sauce for another time. You can either thread the Chicken onto skewers or let the excess sauce drain off before adding the Chicken to the sheet pan. You can (I will!) add extra Salt to the Chicken. Season the Chicken with an extra pinch of Salt.
- Broil the Chicken for 12 minutes or until it is cooked and has a golden, burnished exterior.
- Optional – mix a little bit of the reserved sauce with the diced pineapple/mango/avocado to make a little “salsa.”
- Serve the Chicken with rice, beans, and your fruit salsa. Serve your Chicken with beans, rice, and fruit salsa. So good! Fresh, juicy, and savory.
